“In victory, you deserve Champagne; in defeat, you need it!” With this cogent reasoning, Napoleon Bonaparte drank a toast to the merits of Champagne in his European campaign, and obviously his officers agreed. It is said that the Hussars, the French light cavalry, who played a fundamental role in those epoch-making times, invented a quick way of opening Champagne bottles, called “Sabrage”: A clean cut with a sabre below the neck of the bottle shears off the cork and top, and thanks to the six atmospheres of pressure inside the bottle, no fragments of glass get into the wine. An unexpectedly revolutionary and democratic gesture from those who, sword in hand, fought for the motto “Liberté, égalité, fraternité” (Liberty, equality, fraternity). The sabrage ceremony of today is toasted by the more modest “A Votre Santé” (To your health).
