Sencha is the Japanese word for the first pick of the season. Sencha teas have a mellow flavour if brewed at a low water temperature, but astringent in high water temperature. In Japan 80% of people drink sencha.
Warm the teapot and teacups
Use fresh water- better still use spring or filtered water
Water temperature 80c - Or boil the jug & let cool for about 5 mins
Use 1 tsp per teacup (200ml) - 1 heaped tsp per mug
Steep for 3 mins
If a stronger brew is required use more tea
Traditionally drunk without milk.
